My husband has been away for the last couple of weeks, which means that he has eaten mostly at restaurants. It is, as we all know, very difficult to eat in a balanced way when one is travelling, especially when the schedule doesn't allow for a whole lot of your own food shopping and preparation. I was chatting with him on Saturday and asked whether there was anything he wanted me to buy from the grocery store for when he gets home.
"VEGETABLES," he said.
The following is one of our favourite vegetarian recipes. It is perfect for a summer meal, it works well for potlucks and picnics and it makes wonderful leftovers.
So, ingredients are:
-sweet peppers, whatever colour you like and depending on the size, I usually use 2
-1 large onion
-1 sweet potato (Note that we often pre-cook the sweet potato a little bit (not fully) either in boiling water or in the microwave before we add it to the other veggies)
-vegetable grilling spice mix (or whatever herbs and spices you like)
-some kind of short pasta; we use fusili
-toasted pine nuts*
Ok! Chop all of the vegetables into good sized chunks. Remember that they will shrink on the BBQ, so at least a square inch! Toss all of the vegetables together with olive oil and your spice mix. Grill on your BBQ (we use a veggie basket) until veggies are soft and have a nice char.
In the meantime, boil the pasta and toast the pine nuts!
Mix the vegetables with the drained pasta. For finishing touches, add the tomato, chopped, the fresh basil, also chopped, the feta cheese and the pine nuts.
Enjoy as a side dish or as a meal unto itself!
*Note that if you give your wife the job of toasting the pine nuts and she burns them and you give her a hard time about that, and then you yourself burn the pine nuts the next time you make this recipe, do not expect your wife to let that go by without comment. Hypothetically, that is...
